Fresh mint is not often used, it’s often replaced by peppermint oil. A bat habbit because it’s not authentic and more important it’s not very refined. Oils overrule everthing and are very difficult to conduct. Menthe glaciale is distilled of various types of mint, dominated by the Marrocan mint ‘menthe pipperita’. Delightful for nose and mouth papillas. Delicious in bonbon, whipped cream, mintsauce, champagnesorbet or ice-cream.
